Ginger Shrimp Stir-Fry

 

Ingredients

 

1 tsp             Olive oil

1 1/4 pounds      Medium shrimp, peeled and deveined

2           Carrots juliened

2 tblsp     Minced peeled gingerroot

3           Garlic cloves minced

2 cups            Trimmed snowpeas

1/2 cup     Low-sodium chicken broth

2 teaspoons       Soy sauce

2           Tspn asian sesame oil

4 cups            Hot cooked brown rice

2           Tblspn sesame seeds roasted

 

Preparation

 

1. In a large non stick skillet heat olive oil. add shrimp, for about 3 mins. Transfer to a plate.

 

 

2. Add carrot for 4 -5 min. Add ginger & garlic for another min. Reduce heat & simmer for another min.

 

 

3. Add shrimp, snow peas, broth, soy sauce & sesame oil, bring to boil. Reduce heat and simmer covered,

about 1 min. Serve the rice topped with the shrimp mix: sprinkle with sesame seeds
